Define las características y especificaciones de calidad que deben cumplir las grasas plastificadas más conocidas como mantecas que se indican en la Sección 3.1, conservadas mediante un tratamiento adecuado y destinadas al consumo humano. Incluye cualquier grasa, aceite o mezcla que se ha sometido a un proceso de cristalización controlada y al que se le ha incorporado un gas inerte. Las grasas y aceites empleados pueden ser cualquiera de esos aceites que hayan sido sometidos a un proceso de hidrogenación parcial y total.
